Blueberry Crumb Cake

This blueberry cake is the perfect coffee cake for your next get-together. This cake is topped with blueberries and a spiced brown sugar crumb topping, along with optional finely chopped nuts.

Cook Time: 45 minutes


  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 ounces butter, softened (8 tablespoons)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 1/2 teaspoons vanilla extract
  • 2 cups blueberries
  • ***Topping***
  • 1/2 cup light brown sugar, packed
  • 3/4 cup flour
  • 1/2 teaspoon ground cinnamon
  • dash ground nutmeg
  • 5 tablespoons melted butter
  • 1/2 cup finely chopped walnuts or pecans, optional


Combine the 1 1/2 cups flour, baking powder, soda, and salt; set aside.

In a mixing bowl with electric mixer, cream the 4 ounces of softened butter with 3/4 cup granulated sugar. Beat for about 3 to 4 minutes. Beat in the eggs until smooth. Beat in sour cream and vanilla. With mixer on low speed, beat in the flour mixture just until blended. Spread the batter in the prepared baking pan. Sprinkle blueberries evenly over the batter.

In another bowl combine the brown sugar, 3/4 cup flour, cinnamon, and nutmeg, stirring with a fork until smooth. Add the 5 tablespoons of melted butter and blend well with the fork. Blend in chopped nuts, if using. Sprinkle the crumb mixture evenly over the blueberries.

Bake for 40 to 45 minutes, until the cake is firm and top is browned.

Let cool for about 10 minutes on a rack; remove the side of the pan and cool completely before slicing.

Grease a 9-inch springform pan. Heat oven to 350°.


New York Cheesecake

Makes One 9-inch New York Cheesecake

Prep Time: 20 minutes

Cook Time: 60 minutes


  • 16 graham crackers, crushed fine
  • 2 tablespoons melted butter
  • 2 lbs cream cheese (four 8-ounce packages)
  • 1 1/2 cups granulated sugar
  • 3/4 cup whole milk
  • 4 eggs
  • 1 cup sour cream
  • 1 tablespoon vanilla extract
  • 1 tsp freshly grated lemon zest
  • 1/4 cup all-purpose flour


Preheat oven to 350 degrees F.

  1. In a mixing bowl combine the graham cracker crumbs and melted butter. Press firmly into the bottom of a greased 9-inch round springform pan.
  2. In a large mixing bowl, mix the cream cheese and sugar until smooth. Mix in the milk, and then the eggs one at a time, mixing just enough to combine. Mix in the sour cream, vanilla, lemon zest, and flour until the mixture is smooth. Pour the filling into pan.
  3. Bake for 1 hour, turn the oven off and let cake cool with the door closed for 4 hours to prevent cracking. Chill completely in refrigerator before serving.

Serve plain, or topped with berry sauce.  

Coffee Cake

  • 2 cups flour
  • 1 tsp salt
  • 2 tsps baking powder
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 tsps cinnamon
  • 1 cup chopped nuts

Place flour, salt, baking powder, sugar, cinnamon, and nuts in a bowl. Mix with a wooden spoon. Add eggs and oil, mix again. Pat mixture into a 9″ x 13″ glass greased baking dish. Turn on oven to 350 degrees.

1 (8 oz) package of cream cheese, softened
1/3 cup sugar
1 beaten egg
dash salt
1 tsp vanilla
1 can pie filling, cherry or blueberry

Combine all ingredients except pie filling and mix with mixer. Spread topping over flour mixture.

Bake in 350 degree oven approximately 1 hour.

Warm pie filling in microwave and after cutting coffee cake, top with pie filling before serving. Or, if you prefer, pie filling can be placed on coffee cake prior ro baking.

Strawberry Cake

A strawberry cake recipe, made with a cake mix and strawberries.


  • 1 package white cake mix
  • 1 package (3 ounces) strawberry-flavored gelatin powder
  • 1 cup vegetable oil
  • 4 eggs, lightly beaten
  • 1/4 cup water
  • 3/4 cup mashed strawberries
  • .
  • Strawberry Icing
  • 1/2 cup butter
  • 1 pound confectioners’ sugar
  • 1/4 cup mashed strawberries


Combine cake mix and gelatin powder in a large bowl. Beat in oil, eggs, water, and strawberries. Pour into 2 9-inch round greased and floured cake pans. Bake in a 350 degree oven for 30 minutes, until a toothpick inserted in center comes out clean. Cool and frost with strawberry icing.

For icing, beat the butter and confectioners’ sugar together until smooth. Add strawberries. Spread between cake layers, then frost top and sides.

Black Forest Cake

Ingredients :

  • ½ cup (110 g) butter
  • softened 1+¼ cup (275 g) sugar
  • 2 eggs 1+¼ cup (140 g)
  • all-purpose flour ½ cup (50 g)
  • unsweetened cocoa powder natural
  • ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • ¾ cup (1.8 dl)buttermilk

Ingredients for filling:

¼ cup Kirschwasser (Kirsch/cherry brandy), optional 2 cans (14 oz or 400 g) cherry pie filling or pitted cherries 3 cups (7.2 dl) heavy whipping cream, chilled ¼ cup confectioners’ sugar Milk chocolate curls or shavings, for garnish Maraschino cherries or sweet cherries, for garnish, optional.
